For the Crust:
- 1 lb pizza dough, store-bought or homemade
- 1 cup whole milk ricotta cheese
- 1 tbsp olive oil, plus extra for brushing
- 1 ear of corn, kernels removed
- 1 jalapeño, thinly sliced
- 2 tbsp honey
- 1 tsp smoked paprika
- 1/4 cup fresh cilantro, chopped
- Salt and black pepper to taste
- 1/2 lime, juiced
Instructions
1. Prepare the Crust:
- Preheat oven to 450°F (230°C). Stretch pizza dough into a 12-inch round or rectangle on a baking sheet. Brush lightly with olive oil and bake for 10-12 minutes until golden.
- While dough bakes, heat 1 tbsp olive oil in a skillet over medium-high. Add corn kernels and cook for 5-7 minutes, stirring occasionally, until charred. Season with salt, pepper, and smoked paprika.
- In a food processor, blend ricotta, lime juice, and a pinch of salt until smooth and whipped, about 1 minute.
- Spread whipped ricotta evenly over baked flatbread. Top with charred corn, jalapeño slices, and cilantro. Drizzle with honey and slice to serve.
