For the Crust:
- 1 cup whole milk ricotta
- 1/4 cup heavy cream
- 1 tablespoon olive oil
- 1 baguette, sliced
- 1/2 cup honey
- 1/4 cup dried cranberries
- 1 teaspoon red pepper flakes
- 1/2 cup walnuts, toasted and chopped
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F. Arrange baguette slices on a baking sheet, brush with olive oil, and toast until golden, about 8-10 minutes.
- In a food processor, combine ricotta, heavy cream, salt, and pepper. Blend until smooth and fluffy.
- In a small saucepan, warm honey, dried cranberries, and red pepper flakes over low heat until cranberries soften and mixture is fragrant, about 5 minutes.
- Spread whipped ricotta on each crostini, drizzle with cranberry hot honey, and top with toasted walnuts and fresh thyme.
