For the Crust:
- 2 cups whole milk ricotta cheese
- 1/2 cup cream cheese, softened
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 teaspoon lemon zest
- Salt and black pepper to taste
- 1 cup fresh or frozen cranberries
- 1/2 cup honey
- 1 teaspoon red pepper flakes
- Fresh rosemary or thyme for garnish
- Crackers or toasted bread for serving
Instructions
1. Prepare the Crust:
- In a food processor, combine ricotta, cream cheese, olive oil, garlic, lemon zest, salt, and pepper. Blend until smooth and fluffy, about 2-3 minutes.
- Transfer the whipped ricotta to a serving bowl and use a spoon to shape it into a round ‘snowball’ mound. Chill in the refrigerator for at least 30 minutes.
- In a small saucepan over medium heat, combine cranberries, honey, and red pepper flakes. Cook, stirring occasionally, until cranberries burst and the mixture thickens slightly, about 8-10 minutes. Let cool for 5 minutes.
- Spoon the cranberry hot honey swirl over the chilled whipped ricotta snowball, allowing it to drip down the sides. Garnish with fresh herbs.
- Serve immediately with crackers or toasted bread for dipping.
