A festive, creamy whipped ricotta dip shaped into a snowball and topped with a sweet-tart cranberry hot honey swirl, perfect for holiday gatherings.

For the Crust:

  • 2 cups whole milk ricotta cheese
  • 1/2 cup cream cheese, softened
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • 1 cup fresh or frozen cranberries
  • 1/2 cup honey
  • 1 teaspoon red pepper flakes
  • Fresh rosemary or thyme for garnish
  • Crackers or toasted bread for serving

Instructions

1. Prepare the Crust:

  1. In a food processor, combine ricotta, cream cheese, olive oil, garlic, lemon zest, salt, and pepper. Blend until smooth and fluffy, about 2-3 minutes.
  2. Transfer the whipped ricotta to a serving bowl and use a spoon to shape it into a round ‘snowball’ mound. Chill in the refrigerator for at least 30 minutes.
  3. In a small saucepan over medium heat, combine cranberries, honey, and red pepper flakes. Cook, stirring occasionally, until cranberries burst and the mixture thickens slightly, about 8-10 minutes. Let cool for 5 minutes.
  4. Spoon the cranberry hot honey swirl over the chilled whipped ricotta snowball, allowing it to drip down the sides. Garnish with fresh herbs.
  5. Serve immediately with crackers or toasted bread for dipping.
