Description

A playful, elegant illusion dessert featuring white chocolate shaped like cheese and a raspberry reduction mimicking wine.


Ingredients

For the Crust:

  • 16 oz white chocolate, chopped
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 2 cups fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • Assorted fruits and crackers for serving

Instructions

1. Prepare the Crust:

  1. Melt white chocolate with heavy cream in a double boiler until smooth. Stir in vanilla extract.
  2. Pour mixture into small cheese molds or ramekins. Chill for at least 2 hours until set.
  3. For the reduction, combine raspberries, sugar, and lemon juice in a saucepan. Simmer for 10 minutes, then strain to remove seeds.
  4. Unmold the white chocolate “cheese” and arrange on a board with fruits and crackers. Drizzle with raspberry reduction.
  5. Serve immediately and enjoy the sweet illusion!
