A playful, elegant illusion dessert featuring white chocolate shaped like cheese and a raspberry reduction mimicking wine.

For the Crust:
- 16 oz white chocolate, chopped
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- Assorted fruits and crackers for serving
Instructions
1. Prepare the Crust:
- Melt white chocolate with heavy cream in a double boiler until smooth. Stir in vanilla extract.
- Pour mixture into small cheese molds or ramekins. Chill for at least 2 hours until set.
- For the reduction, combine raspberries, sugar, and lemon juice in a saucepan. Simmer for 10 minutes, then strain to remove seeds.
- Unmold the white chocolate “cheese” and arrange on a board with fruits and crackers. Drizzle with raspberry reduction.
- Serve immediately and enjoy the sweet illusion!
