Description

Savory Yukon Gold potato rounds topped with creamy brie, tart cranberries, crunchy walnuts, and a spicy-sweet hot honey drizzle.

For the Crust:

  • 4 medium Yukon Gold potatoes, sliced into 1/4-inch rounds
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 4 oz brie cheese, thinly sliced
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, toasted and chopped
  • 2 tbsp honey
  • 1/2 tsp red pepper flakes

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss potato rounds with olive oil, garlic powder, smoked paprika, salt, and pepper. Arrange in a single layer on a baking sheet.
  2. Bake for 20-25 minutes, flipping halfway, until potatoes are golden and tender.
  3. Top each potato round with a slice of brie and return to oven for 3-5 minutes until cheese is melted.
  4. While potatoes bake, warm honey and red pepper flakes in a small saucepan over low heat for 2-3 minutes.
  5. Arrange potato rounds on a serving platter, sprinkle with cranberries and walnuts, and drizzle with hot honey.
