For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • Additional powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in lemon zest, lemon juice, and vanilla extract.
  3. In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to the butter mixture, mixing until just combined.
  4. Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart. Flatten slightly with the bottom of a glass.
  5. Bake for 12-15 minutes, until edges are lightly golden. Let cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  6. Dust cooled cookies generously with powdered sugar before serving.
