A creamy, tangy pasta dish featuring ricotta, fresh spinach, and a bright lemon finish for a quick and satisfying meal.

For the Crust:

  • 12 oz pasta (such as penne or fusilli)
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Reduce heat to low and stir in ricotta, lemon zest, lemon juice, and grated Parmesan. Mix until smooth and creamy.
  5. Add drained pasta to the skillet, tossing to coat. If needed, add reserved pasta water a little at a time to reach desired consistency.
  6. Season with salt, black pepper, and red pepper flakes if using. Serve immediately.

Notes

You can customize the seasonings to taste.
