For the Crust:
- 12 oz pasta (such as penne or fettuccine)
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
- In a bowl, mix ricotta, lemon zest, lemon juice, Parmesan, salt, and pepper until smooth.
- Combine drained pasta, ricotta mixture, and spinach in the skillet. Add reserved pasta water as needed to reach desired creaminess. Toss well to coat.
- Serve immediately, garnished with extra Parmesan and red pepper flakes if desired.
