Description

Light and flavorful baked bites made with fresh zucchini, creamy ricotta, and a zesty hint of lemon. Perfect as an appetizer or a healthy snack.


Ingredients

For the Crust:

  • 2 medium zucchinis, grated and squeezed dry
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray or olive oil for greasing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or olive oil.
  2. In a large bowl, combine grated zucchini, ricotta, Parmesan, egg, lemon zest, lemon juice, garlic, breadcrumbs, parsley, salt, and pepper. Mix until well combined.
  3. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  4. Bake for 20-25 minutes, or until the edges are golden and the bites are set.
  5. Let cool for 5 minutes before removing from the tin. Serve warm.

Notes

You can customize the seasonings to taste.
