For the Crust:
- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1 lb fresh green beans, trimmed
- 3 tbsp olive oil, divided
- 2 tsp dried rosemary
- 2 tsp dried thyme
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and black pepper to taste
- 2 tbsp butter
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). In a bowl, mix chicken with 2 tbsp olive oil, rosemary, thyme, lemon juice, lemon zest, salt, and pepper. Let marinate for 10 minutes.
- Toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet with the chicken. Bake for 25-30 minutes until chicken is cooked through and potatoes are golden.
- While baking, heat butter in a skillet over medium heat. Add garlic and sauté for 1 minute, then add green beans. Cook for 5-7 minutes until tender-crisp. Season with salt and pepper.
- Serve chicken and potatoes hot with green beans on the side. Garnish with extra herbs if desired.
