A sophisticated dessert featuring tender baked pears, creamy whipped brie, sweet roasted strawberries, and a spicy-sweet hot honey basil drizzle with a kick of black pepper.

For the Crust:

  • 4 ripe but firm Bosc pears
  • 8 oz brie cheese, rind removed
  • 2 tablespoons heavy cream
  • 1 cup fresh strawberries, halved
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/4 cup hot honey
  • 2 tablespoons fresh basil, finely chopped
  • 1/2 teaspoon freshly cracked black pepper
  • Pinch of sea salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Halve the pears lengthwise and scoop out the cores with a melon baller. Place cut-side up in a baking dish.
  2. Bake pears for 20–25 minutes until tender but still holding shape. Set aside to cool slightly.
  3. Meanwhile, toss strawberries with olive oil and 1 tablespoon honey. Spread on a parchment-lined baking sheet and roast for 12–15 minutes until softened and slightly caramelized.
  4. In a small bowl, beat the brie with heavy cream until smooth and fluffy. Set aside.
  5. For the drizzle, mix hot honey with chopped basil and black pepper. Stir well.
  6. To serve, spread a dollop of whipped brie on each pear half. Top with roasted strawberries and drizzle generously with the hot honey basil mixture. Finish with a pinch of sea salt and extra black pepper.

Notes

You can customize the seasonings to taste. For a milder drizzle, reduce or omit the black pepper. Serve warm or at room temperature.
