A sophisticated dessert featuring tender baked pears, creamy whipped brie, sweet roasted strawberries, and a spicy-sweet hot honey basil drizzle with a kick of black pepper.

For the Crust:
- 4 ripe but firm Bosc pears
- 8 oz brie cheese, rind removed
- 2 tablespoons heavy cream
- 1 cup fresh strawberries, halved
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1/4 cup hot honey
- 2 tablespoons fresh basil, finely chopped
- 1/2 teaspoon freshly cracked black pepper
- Pinch of sea salt
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Halve the pears lengthwise and scoop out the cores with a melon baller. Place cut-side up in a baking dish.
- Bake pears for 20–25 minutes until tender but still holding shape. Set aside to cool slightly.
- Meanwhile, toss strawberries with olive oil and 1 tablespoon honey. Spread on a parchment-lined baking sheet and roast for 12–15 minutes until softened and slightly caramelized.
- In a small bowl, beat the brie with heavy cream until smooth and fluffy. Set aside.
- For the drizzle, mix hot honey with chopped basil and black pepper. Stir well.
- To serve, spread a dollop of whipped brie on each pear half. Top with roasted strawberries and drizzle generously with the hot honey basil mixture. Finish with a pinch of sea salt and extra black pepper.
Notes
You can customize the seasonings to taste. For a milder drizzle, reduce or omit the black pepper. Serve warm or at room temperature.
