For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup orzo pasta
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 3 tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss chicken, bell pepper, zucchini, and red onion with olive oil, balsamic vinegar, garlic, oregano, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes, stirring halfway, until chicken is cooked through and vegetables are tender.
- Meanwhile, cook orzo according to package directions until al dente, then drain.
- Combine roasted chicken and vegetables with cooked orzo in a large bowl. Top with crumbled feta and fresh basil before serving.
