Description

A vibrant one-pan meal featuring tender chicken, roasted vegetables, and orzo pasta, all tossed in a tangy balsamic glaze and topped with crumbled feta cheese.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup orzo pasta
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss chicken, bell pepper, zucchini, and red onion with olive oil, balsamic vinegar, garlic, oregano, salt, and pepper on a baking sheet.
  2. Roast for 20-25 minutes, stirring halfway, until chicken is cooked through and vegetables are tender.
  3. Meanwhile, cook orzo according to package directions until al dente, then drain.
  4. Combine roasted chicken and vegetables with cooked orzo in a large bowl. Top with crumbled feta and fresh basil before serving.
