For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup crumbled feta cheese
- 1/4 cup Greek yogurt
- 1 pint strawberries, hulled and halved
- 1 tablespoon balsamic vinegar (for strawberries)
- Fresh basil leaves, for garnish
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). In a small bowl, whisk together 1/2 cup balsamic vinegar, honey, and olive oil. Season chicken breasts with salt and pepper, then place in a baking dish and pour balsamic mixture over. Bake for 20-25 minutes until cooked through, basting occasionally.
- While chicken bakes, cook orzo in chicken broth according to package directions until al dente. Drain and set aside.
- In a food processor, combine feta cheese and Greek yogurt. Blend until smooth and creamy, scraping down sides as needed. Set aside.
- On a separate baking sheet, toss halved strawberries with 1 tablespoon balsamic vinegar. Roast in the oven for 10-12 minutes until softened and slightly caramelized.
- To serve, spread whipped feta on a plate or bowl. Top with cooked orzo, sliced balsamic chicken, and roasted strawberries. Garnish with fresh basil leaves.
- Drizzle any remaining balsamic glaze from the chicken over the top. Serve immediately.
