For the Crust:
- 4 large Yukon Gold potatoes, thinly sliced
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons fresh thyme leaves
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9-inch round baking dish.
- In a large bowl, combine olive oil, balsamic vinegar, garlic, thyme, salt, and pepper. Add potato slices and toss to coat evenly.
- Layer potato slices in the baking dish, overlapping slightly. Sprinkle Parmesan cheese between layers and pour heavy cream over the top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until golden and crispy.
- Let cool for 5 minutes, then slice and serve warm.
