For the Crust:

  • 1 wheel (8 oz) Brie cheese, rind removed and cut into small pieces
  • 1 bag (10 oz) tortilla chips (preferably sturdy, like restaurant-style)
  • 1 cup fresh blackberries
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup honey
  • 1/2 teaspoon red pepper flakes (or more to taste)
  • 1 tablespoon butter
  • Fresh thyme leaves for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small saucepan, combine honey and red pepper flakes. Heat over low heat for 2-3 minutes, stirring occasionally. Remove from heat and set aside.
  3. Spread tortilla chips evenly on the prepared baking sheet. Scatter pieces of Brie over the chips, ensuring even distribution.
  4. Bake for 8-10 minutes, until the Brie is melted and bubbly.
  5. While the nachos bake, melt butter in a small skillet over medium heat. Add chopped walnuts and cook, stirring frequently, for 3-4 minutes until fragrant and lightly toasted. Remove from heat.
  6. Remove nachos from oven. Top with fresh blackberries and toasted walnuts. Drizzle with the hot honey mixture.
  7. Garnish with fresh thyme leaves if desired. Serve immediately.

Notes

You can customize the seasonings to taste. For a milder hot honey, reduce red pepper flakes. For extra crunch, add a sprinkle of flaky sea salt before serving.
