For the Crust:
- 8 oz block feta cheese, cut into 1-inch cubes
- 1 sheet puff pastry, thawed
- 1/4 cup peach preserves
- 1 tbsp chili sauce (like sriracha)
- 1 tbsp honey
- 1 tsp lime juice
- 1 egg, beaten (for egg wash)
- 2 tbsp chopped fresh mint (for garnish)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut puff pastry into squares large enough to wrap each feta cube. Place a feta cube in the center of each square, fold corners over, and seal edges. Brush with egg wash.
- Bake for 15-20 minutes until pastry is puffed and golden. Let cool slightly.
- In a small saucepan, combine peach preserves, chili sauce, honey, and lime juice. Heat over medium until simmering and slightly thickened, about 5 minutes.
- Drizzle glaze over baked feta bites and garnish with fresh mint. Serve warm.
