Description

A decadent cheesecake with a rich chocolate base, topped with caramel and toasted pecans. Perfect for special occasions.

Ingredients

Scale

For the Crust:

  • 2 cups chocolate cookie crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips, melted
  • 1/2 cup caramel sauce
  • 1 cup chopped pecans, toasted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (163°C). In a bowl, mix chocolate cookie crumbs and melted butter. Press into bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Mix in melted chocolate.
  3. Pour filling over crust. Bake for 45-50 minutes until center is almost set. Cool completely.
  4. Refrigerate at least 4 hours. Before serving, drizzle with caramel sauce and sprinkle toasted pecans on top.

Notes

You can customize the seasonings to taste. For a richer flavor, use dark chocolate and add a pinch of sea salt on top.
