For the Crust:
- 1 lb (450g) cremini mushrooms, cleaned and halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts, toasted
- 2 tablespoons honey
- 1/2 teaspoon red pepper flakes
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook for 8-10 minutes, stirring occasionally, until they release their liquid and start to brown.
- Reduce heat to medium. Add minced garlic, thyme, salt, and black pepper. Cook for another 3-4 minutes, stirring frequently, until garlic is fragrant and mushrooms are caramelized.
- Remove skillet from heat. Transfer mushrooms to a serving plate and sprinkle with crumbled feta and toasted walnuts.
- In a small bowl, mix honey and red pepper flakes. Drizzle the hot honey mixture over the mushrooms and serve immediately.
