For the Crust:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup vegetable oil
- 2 cups finely grated carrots
- 1 cup crushed pineapple, drained
- 1 cup chopped walnuts (optional)
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 teaspoons vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F and grease a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, beat eggs and oil together, then stir in carrots, pineapple, and walnuts.
- Pour wet ingredients into dry and mix until just combined.
- Spread batter evenly in prepared pan and bake for 30-35 minutes until a toothpick inserted comes out clean.
- Cool completely in the pan on a wire rack.
- For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
- Spread frosting over cooled bars and refrigerate for at least 30 minutes before slicing.
Notes
You can customize the seasonings to taste. Add raisins or coconut for extra texture.
