A vibrant and flavorful appetizer featuring sweet charred corn, creamy whipped feta, and spicy hot honey on crispy crostini.

For the Crust:
- 1 baguette, sliced into 1/2-inch rounds
- 3 tablespoons olive oil, divided
- 2 ears of corn, husked
- 1/2 cup crumbled feta cheese
- 1/4 cup cream cheese, softened
- 2 tablespoons plain Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon hot honey
- 1/2 teaspoon lime zest
- 1 tablespoon fresh lime juice
- Salt and black pepper to taste
- Fresh cilantro or mint for garnish
- Flaky sea salt for finishing
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush with 2 tablespoons olive oil, and toast until golden, about 8–10 minutes. Set aside.
- Heat a grill or grill pan over medium-high heat. Brush corn with remaining 1 tablespoon olive oil and grill, turning occasionally, until charred in spots, about 10 minutes. Let cool slightly, then cut kernels off the cob.
- In a food processor, combine feta, cream cheese, Greek yogurt, garlic, lime zest, and lime juice. Blend until smooth and creamy. Season with salt and pepper to taste.
- Spread whipped feta mixture onto each crostini. Top with charred corn kernels and drizzle with hot honey. Garnish with fresh cilantro or mint and a sprinkle of flaky sea salt.
- Serve immediately as an appetizer or snack.
Notes
You can customize the seasonings to taste. For a milder version, use regular honey instead of hot honey. Grilling the corn adds a smoky depth, but you can also char it in a cast iron skillet.
