A vibrant and flavorful appetizer featuring sweet charred corn, creamy whipped feta, and spicy hot honey on crispy crostini.

For the Crust:

  • 1 baguette, sliced into 1/2-inch rounds
  • 3 tablespoons olive oil, divided
  • 2 ears of corn, husked
  • 1/2 cup crumbled feta cheese
  • 1/4 cup cream cheese, softened
  • 2 tablespoons plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon hot honey
  • 1/2 teaspoon lime zest
  • 1 tablespoon fresh lime juice
  • Salt and black pepper to taste
  • Fresh cilantro or mint for garnish
  • Flaky sea salt for finishing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush with 2 tablespoons olive oil, and toast until golden, about 8–10 minutes. Set aside.
  2. Heat a grill or grill pan over medium-high heat. Brush corn with remaining 1 tablespoon olive oil and grill, turning occasionally, until charred in spots, about 10 minutes. Let cool slightly, then cut kernels off the cob.
  3. In a food processor, combine feta, cream cheese, Greek yogurt, garlic, lime zest, and lime juice. Blend until smooth and creamy. Season with salt and pepper to taste.
  4. Spread whipped feta mixture onto each crostini. Top with charred corn kernels and drizzle with hot honey. Garnish with fresh cilantro or mint and a sprinkle of flaky sea salt.
  5. Serve immediately as an appetizer or snack.

Notes

You can customize the seasonings to taste. For a milder version, use regular honey instead of hot honey. Grilling the corn adds a smoky depth, but you can also char it in a cast iron skillet.
