For the Crust:
- 8 oz shrimp, peeled and deveined, chopped
- 4 slices thick bread (such as sourdough or Texas toast)
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a skillet over medium heat, melt butter. Add garlic and cook until fragrant, about 30 seconds. Add shrimp, salt, pepper, and red pepper flakes. Cook until shrimp is pink and opaque, about 2-3 minutes. Remove from heat.
- In a small bowl, mix mayonnaise and lemon juice. Spread this mixture evenly on each slice of bread.
- Top bread with the cooked shrimp mixture, then sprinkle with mozzarella and Parmesan cheese.
- Place toasts on the prepared baking sheet and bake for 8-10 minutes, until cheese is melted and bubbly and edges are golden brown.
- Garnish with fresh parsley and serve immediately.
