Description

Vibrant skewers with juicy peaches, cherry tomatoes, and creamy feta, drizzled with a spicy-sweet basil hot honey. Perfect for summer grilling or as an appetizer.

For the Crust:

  • 1 pint cherry tomatoes
  • 2 ripe peaches, cut into wedges
  • 8 oz feta cheese, cut into cubes
  • Fresh basil leaves
  • 1/4 cup honey
  • 12 teaspoons red pepper flakes (adjust to taste)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

1. Prepare the Crust:

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Thread cherry tomatoes, peach wedges, feta cubes, and basil leaves onto skewers in alternating patterns. Lightly brush with olive oil and season with salt and pepper.
  3. Grill skewers over medium heat for 3-4 minutes per side, until peaches are slightly charred and feta is warm.
  4. In a small saucepan, combine honey, red pepper flakes, and a few torn basil leaves. Heat over low until warm and infused, about 2-3 minutes.
  5. Drizzle the basil hot honey over the grilled skewers and serve immediately.

Notes

You can customize the seasonings to taste. For extra heat, add more red pepper flakes or a minced jalapeño to the honey. These skewers can also be baked at 400°F for 10 minutes if you prefer.
