Description

A vibrant and refreshing appetizer featuring creamy feta marinated in citrus, topped with pomegranate arils and a spicy-sweet hot honey mint lime drizzle.

For the Crust:

  • 8 oz block of feta cheese, cut into 1-inch cubes
  • 1 orange, zested and juiced
  • 1 lemon, zested and juiced
  • 1 lime, zested and juiced
  • 1/4 cup olive oil
  • 1/2 cup pomegranate arils
  • 3 tbsp honey
  • 1/2 tsp red pepper flakes (or to taste)
  • 1/4 cup fresh mint leaves, finely chopped
  • Salt and black pepper to taste
  • Edible flowers (like pansies or nasturtiums) for garnish (optional)

Instructions

1. Prepare the Crust:

  1. In a mixing bowl, whisk together the orange juice, lemon juice, lime juice, orange zest, lemon zest, lime zest, olive oil, and a pinch of salt and pepper.
  2. Place the feta cubes in a shallow dish and pour the citrus mixture over them. Gently toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
  3. In a small saucepan, combine honey and red pepper flakes. Warm over low heat for 2 minutes, stirring occasionally. Remove from heat and let steep for 10 minutes. Strain out pepper flakes if desired.
  4. Just before serving, finely chop the fresh mint and stir into the lime juice (reserve a little lime zest for garnish).
  5. Arrange marinated feta cubes on a serving platter. Spoon pomegranate arils over the top.
  6. Drizzle the hot honey and the mint lime mixture over the feta. Garnish with reserved lime zest and edible flowers if using. Serve immediately.

Notes

You can customize the seasonings to taste. For a milder heat, reduce or omit the red pepper flakes. Marinating the feta longer enhances the citrus flavor.
