Description

A hearty, cheesy, and flavorful casserole combining seasoned meatloaf and tender potatoes for a rugged comfort meal.


Ingredients

For the Crust:

  • 1 lb ground beef
  • 1 lb russet potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup ketchup
  • 2 eggs
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, mix ground beef, breadcrumbs, onion, garlic, eggs, paprika, oregano, salt, and pepper until well combined. Press evenly into the bottom of the baking dish.
  3. Spread ketchup over the meatloaf layer. Arrange diced potatoes on top, drizzle with olive oil, and season with salt and pepper.
  4. Cover with foil and bake for 25 minutes. Remove foil, sprinkle with cheddar cheese, and bake uncovered for another 10-15 minutes until potatoes are tender and cheese is bubbly.
  5. Let cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
