A festive flatbread with tangy cranberries, creamy goat cheese, peppery arugula, and a sweet balsamic glaze, perfect for appetizers or a light meal.

For the Crust:

  • 1 pre-made flatbread or pizza crust (12-inch)
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey or brown sugar
  • 1 cup fresh or frozen cranberries
  • 1/2 cup crumbled goat cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup fresh arugula
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chopped walnuts or pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Place flatbread on a baking sheet and brush with 1 tablespoon olive oil.
  2. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat, stirring occasionally, until reduced by half (about 8-10 minutes). Set aside to cool slightly.
  3. In a small bowl, toss cranberries with remaining 1 tablespoon olive oil, salt, and pepper.
  4. Sprinkle mozzarella cheese evenly over flatbread. Top with cranberry mixture and crumbled goat cheese. If using, add walnuts.
  5. Bake for 12-15 minutes until cheese is melted and edges are golden brown.
  6. Remove from oven, top with fresh arugula, and drizzle with balsamic reduction. Serve warm.

Notes

You can customize the seasonings to taste.
