For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp butter
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 1/2 tsp paprika
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1 tbsp fresh parsley, chopped
- 4 large flour tortillas
- 1 cup shredded mozzarella cheese
- Oil for brushing
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly brush a baking dish with oil.
- In a large skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add shrimp, paprika, red pepper flakes, salt, and pepper. Cook until shrimp turn pink, about 2-3 minutes per side. Remove shrimp and set aside.
- To the same skillet, add chicken broth, heavy cream, and Parmesan cheese. Stir and bring to a gentle simmer until sauce thickens, about 2-3 minutes. Return shrimp to the sauce, stir in parsley, and remove from heat.
- Lay tortillas flat. Divide shrimp mixture evenly among them, placing it in the center. Top each with mozzarella cheese. Roll up tightly and place seam-side down in the prepared baking dish.
- Brush the tops of the roll-ups with oil. Bake for 12-15 minutes, until golden and bubbly. Serve warm.
Notes
You can customize the seasonings to taste. For extra flavor, add a squeeze of lemon juice to the sauce.
