For the Crust:
- 1 lb large shrimp, peeled and deveined
- 8 medium flour tortillas
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 4 cloves garlic, minced
- 2 tbsp butter
- 1 tsp dried parsley
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1 cup shredded mozzarella cheese for topping
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add shrimp, season with salt, pepper, and paprika, and cook until pink and opaque, about 3-4 minutes. Remove shrimp and set aside.
- In the same skillet, pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and sauce thickens slightly, about 3 minutes. Add parsley and adjust seasoning.
- Spoon a portion of the creamy sauce and shrimp onto each tortilla, roll tightly, and place seam-side down in the baking dish.
- Pour remaining sauce over roll-ups, sprinkle with mozzarella cheese, and bake for 15-20 minutes until cheese is melted and golden.
