For the Crust:
- 2 cups cooked chicken breast, shredded or diced
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/2 cup red grapes, halved
- 1/2 cup apple, diced (Granny Smith or Honeycrisp)
- 1/4 cup celery, thinly sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup toasted pecans or almonds, chopped
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, and honey. Whisk until smooth and creamy.
- Add the cooked chicken, grapes, apple, celery, red onion, and nuts. Stir gently until everything is evenly coated with the dressing.
- Season with salt and pepper to taste. Fold in the fresh parsley.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled on a bed of greens, in a sandwich, or with crackers.
Notes
You can customize the seasonings to taste. For a lighter version, use all Greek yogurt instead of mayonnaise. Add dried cranberries or chopped dill for extra flavor.
