A refreshing and creamy chicken salad perfect for warm weather, featuring tender chicken, crisp apples, juicy grapes, and a tangy yogurt-based dressing.

For the Crust:

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/2 cup red grapes, halved
  • 1/2 cup apple, diced (Granny Smith or Honeycrisp)
  • 1/4 cup celery, thinly sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup toasted pecans or almonds, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, and honey. Whisk until smooth and creamy.
  2. Add the cooked chicken, grapes, apple, celery, red onion, and nuts. Stir gently until everything is evenly coated with the dressing.
  3. Season with salt and pepper to taste. Fold in the fresh parsley.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled on a bed of greens, in a sandwich, or with crackers.

Notes

You can customize the seasonings to taste. For a lighter version, use all Greek yogurt instead of mayonnaise. Add dried cranberries or chopped dill for extra flavor.
