For the Crust:

  • 4 bone-in, skin-on chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 large russet potatoes, cut into wedges
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. Marinate chicken thighs in buttermilk for at least 1 hour in the refrigerator.
  2. Preheat oven to 425°F (220°C). Toss potato wedges with olive oil, salt, and pepper, then bake for 25-30 minutes until crispy.
  3. In a bowl, mix flour, paprika, garlic powder, salt, and pepper. Dredge chicken in the flour mixture, shaking off excess.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry chicken for 10-12 minutes per side until golden and cooked through.
  5. Remove potatoes from oven, toss with minced garlic, Parmesan, and parsley. Serve chicken hot with potato wedges.

Notes

You can customize the seasonings to taste.
