A delightful combination of crispy smashed butter beans served over creamy whipped feta, drizzled with a spicy-sweet chili crisp honey. Perfect as an appetizer or a light main course.

For the Crust:
- 2 cans (15 oz each) butter beans, drained and rinsed
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup crumbled feta cheese
- 1/4 cup Greek yogurt
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 tablespoon chili crisp (with oil)
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Pat the butter beans dry with paper towels. Spread them on the baking sheet and gently smash each bean with the back of a fork or a spatula until flattened but still intact.
- Drizzle the smashed beans with olive oil, then sprinkle with garlic powder, salt, and pepper. Toss gently to coat.
- Roast for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Meanwhile, prepare the whipped feta: In a food processor, combine feta cheese, Greek yogurt, and lemon juice. Blend until smooth and creamy. Spread onto a serving plate.
- In a small bowl, mix honey with chili crisp (including some of the oil) until well combined.
- Spoon the crispy butter beans over the whipped feta. Drizzle with the chili crisp honey. Garnish with fresh parsley and serve immediately.
