For the Crust:
- 1 baguette, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 8 oz brie cheese, softened
- 2 tablespoons unsalted butter, softened
- 3 ripe nectarines, pitted and sliced into wedges
- 1 tablespoon honey, plus more for drizzling
- 1/4 cup sliced almonds
- 1 tablespoon fresh mint, chopped
- Salt to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 6-8 minutes until golden. Set aside.
- In a small bowl, combine softened brie and butter. Whip with a fork or electric mixer until smooth and creamy. Set aside.
- Place nectarine wedges on a separate baking sheet, drizzle with 1 tablespoon honey, and roast for 10-12 minutes until caramelized. Let cool slightly.
- In a dry skillet over medium heat, toast sliced almonds for 2-3 minutes until fragrant and lightly browned. Remove from heat.
- Spread a generous layer of whipped brie on each crostini. Top with a roasted nectarine wedge, a drizzle of honey, a sprinkle of toasted almonds, and a few fresh mint leaves.
- Serve immediately, garnished with additional mint if desired.
Notes
You can customize the seasonings to taste. For a savory twist, add a pinch of black pepper or a sprinkle of flaky sea salt. Swap nectarines for peaches or plums if in season.
