Description

A delightful appetizer combining creamy whipped brie, sweet roasted strawberries, spicy hot honey, crunchy walnuts, and aromatic fresh thyme on crispy crostini.

For the Crust:

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 8 ounces brie cheese, rind removed, at room temperature
  • 2 tablespoons heavy cream
  • 1 pint fresh strawberries, hulled and halved
  • 1 tablespoon honey
  • 1 teaspoon balsamic vinegar
  • 1/4 cup hot honey
  • 1/2 cup walnuts, toasted and roughly chopped
  • Fresh thyme leaves for garnish
  • Salt to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange baguette slices on the baking sheet, brush with olive oil, and bake for 8-10 minutes until golden and crisp. Set aside to cool.
  3. In a small bowl, combine the brie and heavy cream. Use a fork or hand mixer to whip until smooth and creamy. Season with a pinch of salt.
  4. On the same baking sheet, toss the strawberries with honey and balsamic vinegar. Roast for 15 minutes, stirring halfway, until soft and slightly caramelized. Let cool slightly.
  5. Spread a generous layer of whipped brie on each crostini. Top with a few roasted strawberries.
  6. Drizzle hot honey over the strawberries, then sprinkle with chopped walnuts and fresh thyme leaves.
  7. Serve immediately as an appetizer or snack.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of red pepper flakes to the hot honey.
