For the Crust:
- 1 baguette, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1 pint fresh strawberries, hulled and halved
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 cup whole milk ricotta cheese
- 1/4 cup heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup hot honey
- 2 tablespoons fresh basil, thinly sliced
- Additional fresh basil leaves for garnish
- Flaky sea salt for finishing
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 8-10 minutes until golden and crispy.
- In a bowl, toss strawberries with balsamic vinegar and honey. Spread on a parchment-lined baking sheet and roast for 15-20 minutes until softened and slightly caramelized.
- In a food processor, combine ricotta, heavy cream, salt, and black pepper. Process until smooth and whipped.
- In a small bowl, stir together hot honey and sliced basil to make the drizzle.
- To assemble, spread a generous amount of whipped ricotta on each crostini. Top with roasted strawberries, drizzle with hot honey basil mixture, and garnish with fresh basil leaves and a sprinkle of flaky sea salt.
- Serve immediately.
Notes
You can customize the seasonings to taste. For a milder version, use regular honey instead of hot honey. For added crunch, top with toasted pine nuts.
