A refreshing, crisp salad featuring garden-fresh cucumbers and sweet bell peppers, tossed in a light, tangy dressing—perfect for warm days and outdoor gatherings.

For the Crust:

  • 2 large cucumbers, thinly sliced
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese (optional)

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the sliced cucumbers, julienned bell peppers, red onion, and fresh dill.
  2. In a small jar or bowl, whisk together the olive oil, red wine vinegar, honey, Dijon mustard, salt, and black pepper until well blended.
  3. Pour the dressing over the vegetable mixture and toss gently to coat everything evenly.
  4. If using, sprinkle crumbled feta cheese over the top.
  5. Chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.
