For the Crust:
- 1 large English cucumber, diced into 1/2-inch cubes
- 2 ripe mangoes, peeled and diced into 1/2-inch cubes
- 8 oz block feta cheese, cut into 1/2-inch cubes
- 3 tablespoons honey
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons extra virgin olive oil
- Salt and black pepper to taste
- Fresh mint leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together honey, lime juice, lime zest, red pepper flakes, and olive oil until well combined. Set aside.
- In a large serving bowl, gently combine the diced cucumber, mango, and feta cheese cubes.
- Drizzle the hot honey-lime dressing over the salad and toss gently to coat without breaking the feta.
- Season with salt and pepper to taste. Garnish with fresh mint leaves if desired.
- Serve immediately or chill for 10 minutes for a cooler salad.
Notes
You can customize the seasonings to taste. For less heat, reduce the red pepper flakes. For extra flavor, add a pinch of smoked paprika.
