Ingredients
6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon white vinegar or lemon juice
Salt to taste
Black pepper to taste
Paprika for garnish
Optional: chopped chives, parsley, or crispy bacon bits
Instructions
1. Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat.
2. Once boiling, remove from heat, cover, and let sit for 10–12 minutes.
3. Transfer the eggs to an ice bath and allow them to cool completely before peeling.
4. Slice each egg in half lengthwise and gently remove the yolks.
5. Place the yolks in a bowl and mash them until smooth.
6. Add mayonnaise, mustard, vinegar, salt, and pepper, then mix until creamy.
7. Spoon or pipe the mixture back into the egg whites.
8. Sprinkle with paprika and garnish with herbs if desired before serving.
Notes
Use older eggs for easier peeling.
Chill before serving for better texture.
