Description

A savory and sweet appetizer featuring roasted eggplant rounds topped with melted brie, dried cranberries, toasted walnuts, and a spicy honey drizzle.


Ingredients

For the Crust:

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 4 oz brie cheese, sliced
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, toasted and chopped
  • 1/4 cup honey
  • 1 tsp red pepper flakes

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Arrange eggplant rounds on a baking sheet, brush with olive oil, and season with salt and pepper.
  2. Roast for 15-20 minutes until tender and lightly browned. Remove from oven and top each round with a slice of brie.
  3. Return to oven for 5 minutes until brie is melted. Meanwhile, warm honey and red pepper flakes in a small saucepan over low heat.
  4. Top each eggplant round with cranberries and walnuts, then drizzle with hot honey. Serve warm.

Notes

You can customize the seasonings to taste.
