For the Crust:
- 1 cup white chocolate chips
- 2 tablespoons heavy cream
- 1/4 cup fresh lime juice
- Zest of 2 limes
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- Green food coloring (optional)
Instructions
1. Prepare the Crust:
- In a microwave-safe bowl, combine white chocolate chips and heavy cream. Microwave in 30-second intervals, stirring until smooth. Let cool slightly.
- In a large bowl, beat softened butter until creamy. Gradually add powdered sugar, beating until light and fluffy.
- Mix in lime juice, lime zest, vanilla extract, and a drop of green food coloring if desired. Stir until well combined.
- Fold the melted white chocolate mixture into the butter mixture until fully incorporated.
- Cover the bowl and refrigerate for at least 1 hour until firm.
- Using a small cookie scoop or your hands, roll the mixture into 1-inch balls. Place on a parchment-lined baking sheet.
- Refrigerate for another 30 minutes to set.
- Serve chilled as refreshing little lime bombs.
