Description

Bright, nutty, and irresistibly moist — this flourless cake melts with every citrus-kissed bite! A sun-soaked Mediterranean-inspired dessert that’s naturally gluten-free.

For the Crust:

  • 2 large oranges
  • 200g almond flour
  • 150g granulated sugar
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Place whole oranges in a pot, cover with water, and simmer for 2 hours until soft. Let cool, then blend into a smooth puree.
  2. Preheat oven to 180°C (350°F). Grease and line an 8-inch round cake pan.
  3. In a bowl, mix almond flour, sugar, baking powder, and salt. Add eggs, orange puree, and vanilla, stirring until combined.
  4. Pour batter into the prepared pan and bake for 45-50 minutes, until golden and a toothpick comes out clean.
  5. Cool completely in the pan, then dust with powdered sugar before serving.
