For the Crust:
- 2 large oranges
- 200g almond flour
- 150g granulated sugar
- 3 large eggs
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Place whole oranges in a pot, cover with water, and simmer for 2 hours until soft. Let cool, then blend into a smooth puree.
- Preheat oven to 180°C (350°F). Grease and line an 8-inch round cake pan.
- In a bowl, mix almond flour, sugar, baking powder, and salt. Add eggs, orange puree, and vanilla, stirring until combined.
- Pour batter into the prepared pan and bake for 45-50 minutes, until golden and a toothpick comes out clean.
- Cool completely in the pan, then dust with powdered sugar before serving.
