Description

A savory one-pan meal featuring tender chicken thighs, crispy roasted potatoes, and juicy cherry tomatoes, all bathed in a rich garlic butter sauce.

For the Crust:

  • 4 bone-in, skin-on chicken thighs
  • 1 lb baby potatoes, halved
  • 1 pint cherry tomatoes
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). In a large bowl, toss potatoes with 1 tbsp melted butter, salt, pepper, and paprika. Spread on a baking sheet.
  2. Season chicken thighs with salt, pepper, and oregano. Place skin-side up among the potatoes on the baking sheet.
  3. Roast for 20 minutes. Remove from oven, scatter cherry tomatoes and minced garlic around the chicken. Drizzle remaining melted butter over everything.
  4. Return to oven and roast for another 10-15 minutes, until chicken is cooked through and potatoes are tender.
  5. Garnish with fresh parsley and serve hot.

Notes

You can customize the seasonings to taste.
