A savory one-pan meal featuring tender chicken thighs, crispy roasted potatoes, and juicy cherry tomatoes, all bathed in a rich garlic butter sauce.

For the Crust:
- 4 bone-in, skin-on chicken thighs
- 1 lb baby potatoes, halved
- 1 pint cherry tomatoes
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). In a large bowl, toss potatoes with 1 tbsp melted butter, salt, pepper, and paprika. Spread on a baking sheet.
- Season chicken thighs with salt, pepper, and oregano. Place skin-side up among the potatoes on the baking sheet.
- Roast for 20 minutes. Remove from oven, scatter cherry tomatoes and minced garlic around the chicken. Drizzle remaining melted butter over everything.
- Return to oven and roast for another 10-15 minutes, until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley and serve hot.
