Description

All the rich, gooey goodness of pecan pie in a soft, chewy cookie form. Perfect for holiday baking or anytime you crave that classic flavor.

Ingredients

Scale

For the Crust:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup pecan pie filling (or homemade caramel-pecan mix)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg and vanilla extract until well combined.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture, mixing just until combined.
  5. Fold in chopped pecans and pecan pie filling until evenly distributed.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden and centers are set. Cool on the pan for 5 minutes, then transfer to wire racks.
  8. Allow cookies to cool completely before serving.

Notes

You can customize the seasonings to taste. For extra gooeyness, add a drizzle of caramel sauce on top after baking.
