For the Crust:
- 8 oz halloumi cheese, sliced into 1/2-inch thick pieces
- 4 large ripe tomatoes, cut into wedges
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, minced
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat a grill or grill pan over medium-high heat.
- In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, and chopped basil to make the vinaigrette. Season with salt and pepper.
- Grill the halloumi slices for 2-3 minutes per side until golden brown with grill marks.
- In a large bowl, combine tomato wedges and grilled halloumi. Drizzle with the vinaigrette and toss gently.
- Serve immediately, garnished with additional basil if desired.
Notes
You can customize the seasonings to taste. For added flavor, try adding a pinch of red pepper flakes or a drizzle of honey.
