A complete, flavorful meal featuring tender grilled salmon with a sweet-savory glaze, crispy roast potatoes, and asparagus baked under a golden cheese topping.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1 lb baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 1/4 cup soy sauce
  • 3 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 tsp dried thyme
  • 1 lemon, sliced for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Toss potatoes with olive oil, thyme, salt, and pepper; roast for 25-30 minutes until crispy.
  2. In a bowl, mix soy sauce, honey, and garlic. Brush half over salmon fillets and let marinate for 10 minutes.
  3. Arrange asparagus on a baking sheet, drizzle with olive oil, season with salt and pepper, and top with mozzarella and Parmesan. Bake for 12-15 minutes until cheese is melted.
  4. Heat grill or grill pan over medium-high. Grill salmon for 4-5 minutes per side, brushing with remaining glaze, until cooked through.
  5. Serve salmon with roast potatoes, cheesy asparagus, and lemon slices.
