Description

A delightful combination of creamy cheesecake, tart cherry filling, and crunchy pistachio crust, these bars are perfect for any gathering.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup chopped pistachios
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 can (21 oz) cherry pie filling
  • 1/4 cup chopped pistachios for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, 1/2 cup chopped pistachios, and 1/4 cup sugar. Stir in melted butter until combined. Press mixture evenly into the prepared pan.
  3. Bake the crust for 10 minutes. Remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla and sour cream until just combined.
  5. Pour the cheesecake mixture over the crust and spread evenly. Bake for 25–30 minutes, or until the center is almost set. Cool completely on a wire rack.
  6. Spread cherry pie filling evenly over the cooled cheesecake. Sprinkle with remaining 1/4 cup chopped pistachios.
  7. Refrigerate for at least 4 hours or overnight before cutting into bars. Serve chilled.
