For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup chopped pistachios
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 can (21 oz) cherry pie filling
- 1/4 cup chopped pistachios for topping
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs, 1/2 cup chopped pistachios, and 1/4 cup sugar. Stir in melted butter until combined. Press mixture evenly into the prepared pan.
- Bake the crust for 10 minutes. Remove from oven and let cool slightly.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla and sour cream until just combined.
- Pour the cheesecake mixture over the crust and spread evenly. Bake for 25–30 minutes, or until the center is almost set. Cool completely on a wire rack.
- Spread cherry pie filling evenly over the cooled cheesecake. Sprinkle with remaining 1/4 cup chopped pistachios.
- Refrigerate for at least 4 hours or overnight before cutting into bars. Serve chilled.
