For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup raspberry jam or preserves
- Fresh raspberries for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (160°C). Line a 9×9-inch baking pan with parchment paper.
- In a small bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan.
- Bake crust for 10 minutes. Remove from oven and let cool slightly.
- In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, beating well after each. Mix in vanilla extract.
- Pour cream cheese mixture over the crust. Drop spoonfuls of raspberry jam onto the filling. Use a knife to swirl gently.
- Bake for 30-35 minutes, or until center is almost set. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Cut into bars and serve chilled. Garnish with fresh raspberries if desired.
