For the Crust:
- 4 boneless, skin-on chicken breasts
- 1 lb baby potatoes, halved
- 8 oz fresh green beans, trimmed
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, sliced
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes and green beans with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Arrange potatoes and green beans on a baking sheet. Place chicken breasts on top, skin-side up, and season with additional salt and pepper. Top with lemon slices.
- Roast for 25-30 minutes, or until chicken is cooked through and potatoes are tender.
- Let rest for 5 minutes before serving. Drizzle with pan juices if desired.
