Description
A wholesome homemade Ezekiel bread made with sprouted grains and legumes. This hearty loaf has a rich nutty flavor and is perfect for toast, sandwiches, or healthy breakfasts.
Ingredients
2 cups sprouted hard red wheat berries
½ cup sprouted barley
½ cup sprouted spelt
¼ cup sprouted millet
¼ cup cooked lentils
2 tablespoons cooked Great Northern beans
2 tablespoons cooked pinto beans
2¼ teaspoons active dry yeast
1½ cups warm water
2 tablespoons honey or maple syrup
2 tablespoons olive oil
1½ teaspoons sea salt
Instructions
1. Grind the dried sprouted grains into fine flour.
2. Combine warm water, honey, and yeast. Let sit for 5–10 minutes until foamy.
3. Add the flour, cooked beans, lentils, olive oil, and salt.
4. Mix until a dough forms.
5. Knead the dough for about 10 minutes until smooth and elastic.
6. Place in a lightly oiled bowl and let rise until doubled.
7. Shape into a loaf and place into a greased 9×5-inch loaf pan.
8. Allow the dough to rise again for 30–45 minutes.
9. Bake at 375°F (190°C) for 40–45 minutes until golden brown.
10. Cool completely before slicing.
Notes
Freshly milled sprouted grains produce the best flavor.
Store at room temperature for up to 4 days.
Freeze sliced bread for up to 3 months.
Toast directly from frozen for best results.
