For the Crust:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 cup orange juice
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 2 cups cooked white rice (preferably day-old)
- 1 cup mixed vegetables (e.g., peas, carrots, corn)
- 2 eggs, beaten
- 2 tbsp vegetable oil
- 1 tbsp sesame oil
- Green onions, sliced for garnish
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, marinate chicken pieces with 2 tbsp soy sauce, ginger, and garlic for 15 minutes.
- Heat vegetable oil in a pan over medium-high heat. Cook chicken until golden and cooked through, about 6-8 minutes. Set aside.
- In the same pan, add orange juice, remaining soy sauce, and honey. Simmer until sauce thickens, about 5 minutes. Return chicken to pan, toss to coat, and set aside.
- In a separate pan or wok, heat sesame oil over high heat. Add beaten eggs and scramble until set. Add mixed vegetables and stir-fry for 3-4 minutes.
- Add cooked rice to the vegetable mixture, stir to combine. Pour in 2 tbsp teriyaki sauce (or a mix of soy sauce and a pinch of sugar) and cook for another 3-4 minutes.
- Serve orange chicken over the teriyaki fried rice, garnished with green onions.
