Description

A flavorful and satisfying meal featuring crispy orange-glazed chicken served alongside savory teriyaki fried rice, perfect for a homemade Asian-inspired dinner.

Ingredients

Scale

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup orange juice
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 2 cups cooked white rice (preferably day-old)
  • 1 cup mixed vegetables (e.g., peas, carrots, corn)
  • 2 eggs, beaten
  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil
  • Green onions, sliced for garnish
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, marinate chicken pieces with 2 tbsp soy sauce, ginger, and garlic for 15 minutes.
  2. Heat vegetable oil in a pan over medium-high heat. Cook chicken until golden and cooked through, about 6-8 minutes. Set aside.
  3. In the same pan, add orange juice, remaining soy sauce, and honey. Simmer until sauce thickens, about 5 minutes. Return chicken to pan, toss to coat, and set aside.
  4. In a separate pan or wok, heat sesame oil over high heat. Add beaten eggs and scramble until set. Add mixed vegetables and stir-fry for 3-4 minutes.
  5. Add cooked rice to the vegetable mixture, stir to combine. Pour in 2 tbsp teriyaki sauce (or a mix of soy sauce and a pinch of sugar) and cook for another 3-4 minutes.
  6. Serve orange chicken over the teriyaki fried rice, garnished with green onions.

Notes

You can customize the seasonings to taste.
