Description

A delicious vegetarian pizza topped with thinly sliced potatoes, herbs, and melted cheese. Perfect for a quick weeknight dinner.

For the Crust:

  • 1 pre-made pizza dough (or homemade)
  • 2 medium potatoes, very thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: fresh rosemary for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 450°F (230°C). If using a pizza stone, place it in the oven to heat.
  2. Roll out pizza dough on a floured surface to desired thickness. Transfer to a parchment-lined baking sheet or pizza peel.
  3. In a small bowl, mix olive oil and minced garlic. Brush mixture over the dough.
  4. Arrange potato slices in a single layer over the dough, slightly overlapping. Sprinkle with rosemary, thyme, salt, and pepper.
  5. Top with mozzarella and Parmesan cheeses.
  6. Bake for 15-20 minutes until crust is golden and potatoes are tender. For extra crispness, bake directly on a preheated pizza stone.
  7. Remove from oven, let cool slightly, garnish with fresh rosemary if desired, slice, and serve.

Notes

You can customize the seasonings to taste. Try adding red pepper flakes for heat or using different cheese blends.
