A delicious and healthy twist on Brussels sprouts, grilled to perfection on skewers and drizzled with a sweet and tangy honey balsamic glaze, finished with crumbled feta cheese.

For the Crust:
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 clove garlic, minced
- 1/4 cup crumbled feta cheese
- Wooden or metal skewers
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat. Soak wooden skewers in water for 30 minutes if using.
- In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper.
- Thread Brussels sprouts onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until Brussels sprouts are tender and charred.
- In a small saucepan, combine balsamic vinegar, honey, and garlic. Bring to a simmer over medium heat, stirring occasionally, until slightly thickened (about 3-4 minutes).
- Remove skewers from grill. Drizzle with honey balsamic glaze and sprinkle with crumbled feta cheese. Serve warm.
